Kadaai Black Eyed Beans (Side Dish)

Black Eyed Beans                  ½ Kilo
Cumin Seeds                         2 tsp
Grated Ginger             1 tsp
Green Chillies                       4 (sliced)
Tomatoes                3 (cut into pieces)
Red Chilli Powder                  ½ tsp
Olive Oil                 1 Table Spoon
Salt                     to taste
Fresh Coriander Leaves

Method     Â
1.Boil the black eyed beans with water adding salt until it is cooked.
2.Heat oil in a heavy bottomed Kadai. Add cumin seeds and allow it to splutter. Then add the green chillies, grated ginger, tomatoes, turmeric powder, chilli powder and coriander powder and fry briefly.
3.Add the cooked beans and add half a glass of water and mix well.
4.Cover and simmer for 10 minutes.
5 Add fresh coriander before serving.     Â
